Why spring tea is different
After a long winter, the tea bush draws nutrients into its roots. When the first spring buds emerge, they carry the most concentrated flavors of the entire year — amino acids, sugars, and aromatic compounds at their peak.
West Lake Dragon Well (Xihu Longjing) is China's most celebrated green tea. The flat, jade-green leaves are pan-fired by hand within hours of picking, preserving the sweet, chestnut-like character.
